Bacon Wrapped Barbecue Chicken Kabobs

Bacon Wrapped Barbecue Chicken KabobsBacon, chicken, barbecue sauce, and grilling!  Doesn't get a whole lot than that.  These delicious Bacon Wrapped Barbecue Chicken Kabobs were easy to cook and nice and tasty.

The recipe came from The Big Book of BBQ which is from the editors of Southern Living.  It uses chicken tenders, bacon, a barbecue sauce mixture, and wood skewers to create a great dish.

To make these, take 2/3 cup of your favorite BBQ sauce, 1/3 cup of chili sauce, and 2 Tbsp. Worcestershire sauce and mix together.  If you want to have some sauce for dipping, you could increase the amounts, using the same proportions, or just use the BBQ sauce.

Next, add the chicken tenders, and the BBQ sauce mixture to a glass bowl, or zip-lock bag and mix until coated.  Then store in fridge for an hour.  While these are marinating, start soaking the wooden skewers in some water--helps them not to burn as much.

While waiting for the chicken and wooden skewers, start cooking your bacon.  I found that using laying the bacon on a sheet of parchment paper on a baking sheet in the oven works great.  Cook at 400 degrees for about 15-20 minutes.  You don't want the bacon done too much.

After the hour is up and the bacon is done, take each chicken tender, lay a piece of bacon on top, and thread the bacon - chicken tender piece onto a skewer.

Grill the kabobs about 5 minutes on each side or until done.  Don't have the heat up too high or you'll burn them!    Use some BBQ sauce for dipping and you have some delicious kabobs!

I like my bacon cooked right on the bbq or smoker. Adds a great flavor.

Never tried bacon on the smoker. I’ll have to give that a try!
