Cooking Potato Chicken Packets on the Grill

Potato Chicken Foil PacketsThis was an easy, tasty dish cooked in aluminum foil on the grill.  Nothing hard about and you cook individual servings in foil packets, which makes cleanup easy.

While this recipe uses red potatoes, yellow squash, and onions, you could add any other veggies that would like, such as green beans, peas, or carrots.  You can see what it looks like at the right when cooked as specified in the recipe.

Same thing with the spices--try other spices other than rosemary, thyme, and basil.  You'll be cooking the same basic dish, changed up in your own way.  Let me know what combinations you try and how they worked for you.

Potato Chicken Foil Packets

Foil packets of chicken and veggies cooked on the grill.
Ingredients
  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 3 tsp dried rosemary, crushed
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • 1 garlic clove minced
  • 8 red potatoes, quartered
  • 2 med yellow squash, cut into 1/4 inch slices
  • 1 onion, sliced
  • 2 tbsp butter, cubed
  • Salt and Pepper
Instructions
  1. Put each chicken breast on a couple of large pieces of foil.
  2. Combine the oil, rosemary, thyme, basil, and garlic (or combination of herbs that you choose).
  3. Drizzle this oil mixture over the chicken/
  4. Add potatoes on top of the chicken.
  5. Add squash, sliced onions, and butter.
  6. Sprinkle with salt and pepper as desired.
  7. Fold the foil over and seal tightly all around.
  8. Grill, covered on medium heat for 30 minutes. Check to make sure that the chicken is at 170 degrees.
  9. Open the foil carefully so you don't get burned with the steam and serve!

It's been fun cooking in foil packets on the grill.  It expands some of the dishes you can cook.  This is also a dish that you could do when you go camping.  Make them up ahead of time, put in a cooler, and toss and the coals from your campfire after you get that going.
