Rice on the Grill

Rice on the GrillWho knew?  Cooking rice on the grill?  It CAN be done!  Although it uses instant rice, which isn't my favorite, the result was a tasty dish that would be a great side dish.  In fact, it was.  I ending up eating it with the Grilled Beef Shish Kebabs.

This is actually the first time that I've tried rice on the grill.  Anyone else tried it?  I'm not talking about in a Dutch oven, although that definitely works.  I'm talking about putting rice in some type of a pan, covering it, and cooking it on the grill.  It may be a bit surprising, but it really did turn out well.

Here's the recipe:

Cooking rice on the grill makes it easy to have your side dish ready while you are cooking your main dish. Why not cook your whole meal on the grill?
Ingredients
  • 1 1/3 cups instant rice, uncooked
  • 1/3 cup sliced fresh mushrooms
  • 1/4 cup chopped onion
  • 1/2 cup water
  • 1/2 cup chicken broth
  • 1/3 cup ketchup
  • 1 tsp salt
  • 1 tbsp butter
Instructions
  1. Combine the rice, mushrooms, onions, water, chicken broth, ketchup and salt in a 9 inch disposable foil pan. You can use round or square.
  2. Dot the rice mixture with butter.
  3. Cover with foil and seal tightly.
  4. Put on the grill, over indirect heat, and cook in medium heat for 15 minutes.
  5. Remove the foil carefully so you don't get burned by the steam.
  6. Fluff with a fork and serve.
  7. Enjoy!

You could also add other things to the rice: peas, chopped green pepper, etc.
