    when cooking with dutch oven how much charcoal top and bottom? ben

    1. It does vary, but a rough rule, although some say that it is too hot, is to take the diameter of the Dutch oven, add three and put that many briquettes on top, take the diameter and subtract three and put that many underneath. That gets you to about 325-350. Then you need to adjust a bit for wind and temperature. When it’s cold outside, you’ll need more, and when windy you may need more.

      Also, I find that you may want to vary things a bit depending on what you are cooking. If I’m doing a dish with a lot of liquid, like a stew, I tend to put more underneath. When doing a bread, I put fewer underneath. Hope that helps you get started.

    So happy to find you! Long time cook but a novice with the Dutch Oven. Cast iron Dutch Oven recipes besides stew and cobbler are hard to find with charcoal instructions! Thanks.
